Homemade Ice Cream

Ingredients
- 2 quarts whole milk
- 1 can canned milk ( I use sweetened, sister uses unsweetened your choice )
- 4 junket tablets - in 2T warm water
- 5 eggs ( original was 4 eggs )
- 2 1/2 cups sugar
- 1 1/2 T vanilla
- 1/2 t lemon extract - ( or less )
Instructions
Now this is where the challenge came in, the recipe that was handed down to me did not have instructions on how to assemble the above ingredients since everyone else in the family knew how it was done. So with a little Googling put the following together from several different recipes.
- Place Ice Cream canister in refrigerator/freezer to chill while making mix.
- Dissolve 4 Junket tablets in warm water and set aside
- Beat eggs until light and fluffy ( 2 min )
- Add sugar and beat ( 2 min )
- Add part of milk and mix until blended
- Place mix in saucepan and head until lukewarm ( ~110° )
- Add Vanilla, lemon extract and Junket tablets to warmed mix and blend in.
- Pour warmed ice cream mix into mixer and add rest of whole milk to fill ( leave room in can for expansion )
